Abundant Crop Recipe: Zucchini Brownies

What is better than zucchini bread?  How about zucchini brownies?  Yeah, that’s what I thought! haha

Zucchini Brownies

These brownies may be a good way to trick your children into eating zucchini.  I made the fatal mistake of telling my dear hubby what these  brownies were made of, and he developed an instant aversion to them.  Some of the women from church, however, could not get enough of these babies.  And to be honest, I cannot remember if I ate one.  I have this habit of loving to bake and then not wanting to eat what I made… maybe because it took so long to bake?   Anyways, I am going to make these again and make sure I eat them!  But for now, here’s the recipe

Zucchini Brownies
adapted from this recipe, without the frosting

Ingredients:
1/2 Cup Vegetable Oil
3/4 Cup White Sugar
3/4 Cup Brown Sugar
2 teaspoons Vanilla Extract
1 1/2 Cup All Purpose Flour
1/2 Cup Whole Wheat Flour
1/2 Cup Unsweetened Cocoa Powder
1 1/2 teaspoons Baking Soda
1 teaspoon Salt
2 cups Zucchini & Squash, Shredded

Directions:

Preheat oven to 350 degrees.  Grease and flour 9 x 13 baking pan (or glass dish, like I did). In a large bowl (or your stand mixer), mix together oil, sugar, and vanilla until well blended.  In another bowl combine flour, cocoa powder, baking soda and salt.  I like to sift part of the flour with the other spices, this way you don’t end up with clumps of baking soda in your brownies.  Blend into wet mixture.  Fold in the zucchini and pour into prepared pan.

Bake for 25 to 30 minutes and then let cool.

  1. I can’t believe Matthew wouldn’t try them. He always loves what you create! These look wonderful and I love the idea of adding vegetable (and maybe therefore some fiber) to brownies. I’m going to have to try them. Speaking of abundant crops, Suzanne gave me a big bag of apples from her tree. Says they’re better for baking than slicing and eating. I’ll be looking for a scrumptious and easy apple pie recipe to bake and freeze (Something like that amazing Claim Jumper
    Dutch Apple Crunch pie, or whatever it’s called).
