Abundant Crop Recipe: Fizzy Tangerine Mocktail

We have a tangerine tree.  The funny thing is, we thought it was an orange tree — and we kept waiting for the oranges to get big enough to pick!  Our in-laws were nice enough to let us know that it was a tangerine tree and that the fruit was ready to be harvested.  So a few weeks ago our house was FULL of tangerines.  I thought I would share some of the recipes that I came up with.  And I have a sneaking suspicion that my other blog -half may be appearing in the abundant crop posts this month…

I wanted to find a tangerine cocktail.  Food Network had Tangerine Margaritas, Whole Citrus Margaritas, and this Zingertini (which actually uses Tangerine tea, so it defeats the purpose of abundant crop).   I also found this  Sleigh Ride Punch, which must be tested this the winter!  Has anyone had granita?  This recipe sounds fabulous, but I’m not sure exactly what it is!

The Tangerine Champagne recipe from Sandra Lee inspired this mocktail.

Fizzy Tangerine Mocktail

Ingredients:

  • Carbonated Water
  • Tangerine Juice

Fill the glass halfway with carbonated water.  Add tangerine juice to fill.  That is it!  It was really yummy!  I think I will garnish it with frozen berries next time.  If I did that, I would put the berries in the glass first, and then everything else.

However, some of us like drinks to have a kick.  To try something a little different you can add Raspberry Vodka — because that is what I had in the fridge. And now that I think about it, the bottle should really be in the freezer!  It added just the perfect little kick.
