Tilapia with Roasted Corn

Ever since Megan hooked me up with an Everyday With Rachael Ray
subscription, I’ve been anxious to see if her recipes really are all that and a bag of “yum-o” chips. This really is left up to Matt, who can be a picky eater. OK fine, we’re both fairly picky.

I wanted to try this recipe because it met my top requirements: quick, easy and using basic ingredients.  The sauce/glaze/whatever was mayo based with chili pepper. Chili pepper is a basic ingredient … that I don’t happen to have. So I decided to throw in some garlic powder, oregano and some seasoned salt for good measure. Next time I think I may add more spices since the mayo seems to tame the flavor.

As I was mixing this, Matt thought it resembled ranch dressing, which he despises. After convincing him that this wasn’t going to be “ranchy,” he shrugged.

I forged ahead anyway, determined to make a winner of a dinner. That is, after I called my mom to ask how to broil something in the oven. Wikipedia kept telling me it was the same as grilling. Yeah, right. That site is not to be fully trusted. So, my mom basically told me to press the broil button (d’oh!) and to keep the oven open while broiling. Sounded easy enough.

I put some of the sauce/glaze/whatever on the baking dish, then slathered it on the fish and threw some thawed corn over it like confetti. About 15 minutes later, the corn and fish edges looked nice and slightly toasty. I should also mention that I made rice to go with it, since we’re starch fiends that won’t be filled with just one fillet of fish. I squeezed some lime juice on there, which really helped with the flavor. Sweet corn + zingy lime = yum!

“So, what do you think?”

CHOMP “It’s good.” CHOMP

From a man with few words, I sensed this was a victory for me and mayo-based sauces.

“So would you want it again?”

CHOMP “Yeah!” CHOMP

“Is that going to fill you up?”

CHOMP “Probably not.” CHOMP

So, it took me a while to get to the point, but it’s husband approved. I also made this for my parents as a “thank you dinner.” They approved it as well. So try it out!

Tilapia with Roasted Corn

Ingredients:

  • 1/4 cup mayonnaise
  • 2 teaspoons chili powder
  • Salt
  • 4 tilapia fillets (1 pound total)
  • 1 1/2 cups frozen corn, thawed
  • 1 lime, cut into 4 wedges

Directions:

  1. Preheat the broiler. In a small bowl, combine the mayonnaise, chili powder and 1/4 teaspoon salt. Grease a 9-inch square baking dish with 1 teaspoon of the mayonnaise mixture. Place the tilapia fillets in the baking dish and coat with the remaining mayonnaise mixture. Top with the corn.
  2. Broil until the corn is lightly browned and the fish is cooked through, about 10 minutes. Serve with the lime wedges.

    Rach is all that and a bag of chips! haha I need to bust out one of her 30 min meals cookbooks that I have, again. Thanks for the inspiration! And glad to hear it’s hubby approved!

    Meets important priorities: fast and delicious. I may have to try this myself! And I must say, I love getting the “Mom, how do you …” calls from Megan. But she doesn’t ask me too often. So if you ever can’t reach your Mom, give me a try. :)
